Earl Grey Milk Jam

I posted on Instagram of my Earl Grey Milk Jam recently and I received many questions about the recipe.  So here it is…

Adapted from this blog:

1 Cup cream
1.25 Cups of whole milk
3/4 Cup of sugar
5 Tablespoons of earl grey tea

Cook cream, milk and sugar on low heat, stir with a wooden spoon for about 30 minutes until the mixture changes color and thickness, add the earl grey tea (steep tea bag, I used Tazo Earl Grey, in 5 tablespoon of hot water for at least 5 minutes. I added 5 tablespoons, but 3-5 will do), stir for another 3-5 minutes and pour it into bottles.  Put the bottles into the refrigerator for a night and you can enjoy the next day!

Another easy way is buy one can of condensed milk at any market, pour the whole can into a pot and warm it on low heat for about 20 minutes, add 3-5 tablespoons of earl grey tea, stir for 3-5 minutes and it’s ready to be bottled.

  14. I’m really interested in making this, but could you explain how you make the tea exactly? im guessing not the average 1tsp to 8oz water, right? do you make it more concentrated? (also i assumed it was tea leaves too, you might want to specify prepared tea in your recipe!) thanks!

  22. Are we taking *real* cow’s milk cream, or heavy whipping cream? Would it be possible to use coconut milk? Just wondering- I haven’t even checked if cooking coconut milk would reduce it too much- just a hair brained idea.

    Tried this last night for my boyfriend’s birthday morning surprise (he’s British). Unfortunately, it did not set up at all (it’s just liquid and just barely thickened but certainly not enough to spread on toast…any clue why that happened? He was so disappointed and I feel terrible. I had it on low for almost an hour…it didnt really thicken much or change color (just slightly)…perhaps that was my mistake? Thanks for any help….Liz

    It tasted just fine (used Double Bergamot- Stash)….yum!!
